Spelt pasta is made from an ancient grain that has a low gluten content and has a high protein and fibre content.  These organic spelt pasta shells are made from certified organic spelt flour. This ancient whole-grain wheat has been in cultivation since 5000 BC. Whilst spelt contains the gluten protein, it is less likely to cause digestive upset than conventional wheat.
