The texture of both leaves and stalks is crisp, and the flavour is somewhere between mild cabbage and spinach. If very young it can be eaten raw in salads, but is best when briefly cooked.  Cabbage is a very good source of manganese, dietary fibre, calcium, magnesium, and potassium. It is also rich in various vitamins including vitamin C, B6, A, K, and E and high in antioxidants including flavonoid, zeaxanthin, lutein, choline, and beta-carotene.
