Parsley can be curly, or flat leaf/ Italian.  It is a rich source of vitamins K, C, A and vitamins of the B group. It also contains dietary fibres and minerals such as potassium, magnesium, calcium and iron. Parsley was used in ancient Rome as an ingredient of salads, to eliminate the effects of a hangover and as an ornament in the form of garlands for the head. It can also be used as a breath freshener and helps to neutralize garlic breath.  It can also be added to soups, stocks, sauces or as a garnish and is best added at the end of cooking.
